Mitchie’s Chef Classics

Last Friday, we were invited to attend the media launch for Mitchie’s Chef Classics, a new line of quality cookware made from high quality 18/10 stainless steel body from Sunnex (one of my fave cookware brands).

To give you a background, Chef Mitchie Sison was one of the co-host of the cooking show Ka-Toque at QTV 5 and is known to whip up comfort food with a twist.  She comes from a family who loves to cook and eat.  In fact, her parents created the original tapsilog concept and started their own restaurant which grew into five branches all over the metro.  Armed with a degree in B.S. Hotel, Restaurant and Institution Management at De La Salle – College of Saint Benilde, Chef Mitchie was sent by the school to audition for the cooking show and the rest, as they say, is history.  While doing the cooking show, she was also doing culinary consultancies for Dolce Latte Café & Gourmet Bakeshop and Chewy Junior Express.  She has also been operating her own commissary, Signatures by Miel Commisary, but her biggest dream is to open her own cookie shop and a bistro that serves healthy food.  Chef Mitchie has also appeared in various cooking shows and food magazines.  Hong Kong cookware brand Sunnex also saw her potential and tapped her to become a chief endorser for Sunnex Philippines.  She was also involved in developing this new line and as a chef, her inputs were very valuable.

The Mitchie’s Chef Classics collection is comprised of a grill pan, wok, sauté pan (with another layer for steaming), sauce pans, pots and skillets.  It also includes a peppermill and an oil spray & dispenser, which is most useful for spraying your grill pan or spritzing your salad greens with dressing.  Which is great for healthy cooking and for dieters too.

And if you’re a cooking momma like me, it is important to have the right kitchen equipment & utensils, it not only saves time and effort but is also a vital component on the dish you are cooking.    This new collection features a high impact bonded capsulated bottom.  And what’s more important is that there is no risk of  toxic elements.  What’s more, the pieces in the Mitchie’s Chef Classics have tempered glass lids with vents.  But my favorite feature is the use of silicon in its lid knobs and handle.  It is non-stick, stain-resistant, hard-wearing and can tolerate even extreme temperatures.  The silicon grip is oven safe and does not react with food nor does it produce hazardous fumes.  Imagine being able to sear meat on the stove top and immediately transferring the whole pan into the oven, without transferring the food to another baking dish!  What a great time saver!  And no more burnt and melted pot handles!

During the launch, Chef Mitchie cooked some food for us.  For the entrée, she made Chicken Marsala with steamed Lemon Squashed potatoes.  She cooked the chicken using the sauté pan and then added the 2nd layer on top of the pan to steam her veggies and potatoes.  Talk about convenience!   Plus her veggies were infused by the flavors of what’s cooking in the sauté pan!  I love it!  When I tasted the dish, it was savory but I can also taste a hint of lemon, which adds freshness to the dish and add to that the earthy flavors of the mushrooms…..Yum! It was really good!  Then for dessert she also made an Apple & Pear Tart Tartin with Walnut Steausel… sounds complicated?  No, it’s not, chef Mitchie just used her skillet to make this, no need transfer into a baking pan!  And the dessert was so scrumptious and the best part is that it’s so easy to make.  Chef Mitchie, whipped up these dishes in just a few minutes!   And if you want to try these dishes, I will be sharing the recipes with you in my next post…promise!

I’m a Cooking Momma

My fascination with food and cooking started when I was a child.   My parents are both great cooks and I was so amazed at how they can turn ordinary vegetables, scary looking raw seafood and meat into fragrant, savory and scrumptious dishes.   Growing up, our meals at home were never boring and my parents had this rule that we have to try everything.  So at an early age, I learned to eat bone marrow, mussels, scallops, “kuhol”, liver, kidneys, intestines and even ox brains.  I learned to love food and the fact that I am not allowed in the kitchen intrigued me more.

After graduating from high school, I begged my parents to let me go to a culinary school, but surprisingly, in spite of their passion for cooking, they didn’t allow me.  First, it was too far and too expensive, at that time culinary school meant going abroad, Switzerland to be precise, to Les Roches.  The 2nd reason was because they wanted me to take a safer more conventional course.  My mom wanted me to become a doctor and my dad wanted me to become a lawyer (which my husband always says would have suited me well, coz he can never win in an argument :) ).  So instead, I took up Psychology and Marketing, although my passion for cooking and good food stayed with me.  But I never really got around to really experimenting in the kitchen until years later.

I started by following recipes in the cookbooks and asking my mom, then slowly coming up with my own styles and versions.  Then with the advent of the Food Network, I was exposed to more cooking techniques and a lot more fascinating dishes.  And you know what?  I tried most of them.  So while I enjoyed cooking, my family and friends enjoyed eating the foods I cooked.  Actually I can now say that I have quite a few dishes that I have mastered, these are the dishes people always request from me.  And guess what?  Now my mom is the one asking me for my recipes. :)

With three kids, my hubby and my business, life has been very busy and my schedule is always hectic.  But the dream to become a chef is still here… maybe in 2 years or maybe 3…. But in the meantime I will still go on cooking, experimenting and learning, because I love to cook, I love to eat and I am so thrilled when people burp or loosen their belts after feasting on the dishes I cooked.  I  AM  a Cooking Momma… I am passionate about it and I don’t need to be a chef to cook for the people I love.  And because of my ardent love for cooking and food, in my next posts, I will even share some recipes with you my dear mommy readers, I will even share my shortcuts and cheat tricks with you and I hope you and your family will love them too.

A great lunch at Lolo Dad’s Brasserie

Yesterday, hubby and I decided to have lunch at Lolo Dad’s Brasserie at 6750.  The resto occupies what used to be “Giraffe”.


I had decided to try their Antipasto Buffet and hubby chose to partake of the Lunch Buffet.  Also, I ordered a glass of Chardonnay to pair up with my lunch, while hubby had a bottle of cold beer.

The Antipasto Buffet is just Php380 + service charge, while the Lunch Buffet (which includes Soup of the Day, Choice of Pizza, choice of Pasta, Choice of Entrée and Dessert of the day) is only Php800 + service charge.

For only 380+, it’s easy on the pocket, yet very filling.   I especially looooved the pate, the assorted cheeses and cold cuts, mushrooms, salads, mussels and the salmon.  All of my faves in one buffet!

Hubby’s “Lunch Buffet” already included the Antipasto Buffet and he also opted to have the Creamed Smoke Salmon Pizza, the Garlic, olive oil & anchovy pasta and the Pork in Shrimp Paste entree.  I wasn’t able to get pics of the (untouched) food as he immediately dug into them.  But he looved the Pizza and especially the Pork binagoongan, although he found the pasta a tad salty, maybe next time we can tell them to hold the anchovies.    And boy, was he stuffed.  By the the time he got to dessert his stomach is groaning under the weight of all that food and all that for just 800+.

They also served complimentary bread (served with herbed butter) which I really loved… it was warm, soft and light as air.  And they were huge too!

I myself am so happy and satisfied with the Antipasto Buffet.  With my glass of Chardonnay, it was indeed the Perfect Lunch!  It was light, full of different flavors and very satisfying.

And with the nice interiors and impeccable service, I would definitely be back.  Maybe next time, hubby can try their “Steak all you can” (1,200 +10%).  As for me, I am looking forward to trying the Goose Fat Fried Chicken, the Roasted Rainbow Trout or their Surf & Turf Sandwich…. mmmm…. just the thought of all these is making my mouth water…. I want to go back…. NOW na!

Are we prepared for the “Big One”?

I’ve always been one of those paranoid, OC moms.  When staying in hotels, the first things I look for are the emergency exits, I then memorize its location (e.g. how many doors from mine, right or left side).   I also don’t like staying in floors higher than the 12th (coz the fire truck ladder won’t be able to reach the higher floors, although this precaution is useless if the whole structure pancakes during a quake) and if I can have it my way, I would choose street view (coz fire trucks can’t drive thru the pool right?), although my husband always insists on pool or sea view.  The next thing I do is wipe down the switches and TV remote control with alcohol, as some research has shown that these are usually the dirtiest things in a hotel room. Yuck!


At home, we have our family first aid kit and I’ve also given our househelp their own kits.  My 10 year old also has her own kit in her school locker (which includes water, canned goods, flashlight, batteries, tissue, meds and a blanket).   We also have a “panic bag” where I have flashlights, canned goods, meds, batteries, betadine and first aid stuff.  But these are just some simple precautions I do.  After the Japan quake last week, I have taken stock on what I have and can do in times of emergencies.  Needless to say, I have beefed up our Safety and Survival kits and would like to share them with you.

Going back to the topic of earthquakes, we all know that we are also situated in the “Ring of Fire” and we should all be ready if and when the big one comes… CNN released a report last year that documented Manila’s earthquake vulnerability citing the Marikina Valley fault as “ready to give in,” according to Geologist Mahar Lagmay, an associate professor at the National Institute of Geological Sciences at the University of the Philippines. Lagmay said a 7.0-earthquake would be like a “1,000 Nagasaki atom bomb explosion underneath the Earth’s surface along the Marikina Valley Fault.”

Meanwhile, an Inquirer report published today, March 14, listed catastrophic scenarios cited by Pacific Strategies and Assessments should a high-magnitude earthquake hit Manila, which could include: an estimated 117,000 homes that would “either collapse or suffer damage, rendering 1.2 million homeless,” damaged water reservoirs and purification plants that would immediately cut 4,000 water supply points, and “at least 30 kilometers of electric cables cut, removing the supply of power instantly across the metropolis,” among others.

Now these are scary facts and do you already know what to do?  I myself am confused on what is the “right” survival strategy.  Do we “drop, cover and hold on? Or do we follow Doug Copp’s “Triangle of Life” (The theory is that  we should lie in a fetal position beside a bed, sofa, car etc., since a large object will create a void.  But this theory had been scratched up by some as a “myth” and has been debunked by Rocky Lopes of the American Red Cross).   Now I want my family and I to be safe but I am really torn and confused… so if you have any inputs on this, please feel free to share them with us.

With so many natural disasters and every day occurrence around us, I really think that we should all be ready and knowledgeable on first aid procedures.  I have always wanted to take a first aid class for the longest time, but I had always been too busy.  But now, I’ve realized that we should never be too busy for our family’s safety.  So I called up the Philippine National Red Cross Safety Services and inquired on their classes.  The woman who answered, Nits was very helpful.   And these are what she told me… To avail of the First Aid for Homebodies group class, there should be a minimum of 14 participants.  The class is 2 days (one day for first aid and the next day for CPR) and the fee is Php860 per pax (520 for first aid and 340 for CPR), these includes workbooks and certificates.  We should also be the one to provide a venue.  And the classes will be scheduled 1-2 weeks after group registration fee has been paid.

Now I plan to bring my yaya along too (this is especially important as they are the ones in charge of our children when we’re not home) and will also be inviting some family and friends to join.  I am also extending this invitation to you my mommy and daddy readers.   So for those who want to join, pls send me your name, mobile number, how many pax and also if u prefer weekdays (pls choose between Mon. & Tues. or Wed. & Thurs.) or weekends (Sat. & Sun.).   You can either email me (momtrepreneur1@yahoo.com or put the info in the comment box).   Also if you have a venue you can let us use for free or for a minimal fee, it will be most appreciated.  If not, you can suggest a venue we can rent, and we can just split the fee among all the participants.  Ideal venues would be in Ortigas center or Makati, as it will be easier for particpants from the North and the South.

Mommy Jekyll and Mrs. Hyde

My FB status a week ago

Don’t you find it annoying when your kids or even your hubby does this?  They holler and shout to me from another room that they can’t find “something”.  I go in look for 2 minutes and voila! It’s just right there under their noses.  I usually say “Kung ahas iyan eh tinuklaw ka na.”  And my lola used to say “Gamitin ang mga mata, hindi ang bibig sa paghahanap”.

It may be funny now, but you have to admit, there are indeed lots of times when our family does things that really makes us fuming mad.  Especially, during my busiest and stressful days, I am easily irked.  And the smallest things can make me want to climb walls.  Just the sight of an unmade bed can make me blow my top.

I remember, there was this particular time, my “yaya” was off and I came home super tired & stressed and was greeted by a messy bedroom.  And to top it off my toddler was running around with food caked around her cheeks.  Boy, was I mad!  Imagine, the baby hasn’t been bathed, my other child hasn’t taken a bath yet and was still lounging around in her jammies while watching cartoons, my eldest daughter was so busy facebooking and my hubby was lying down reading the papers.  And the worst part was, nobody even looked up when I came in. (Well, except the baby J) Needless to say, I flew off the handle, started screaming, giving orders (while washing baby’s face)  and stormed off the room.  I didn’t even had time to look at their shocked faces.  After a while, my hubby came down to the kitchen to talk to me.  He told me to relax, it was a weekend after all, and nobody’s in a hurry and that I should not get mad at the kids that often.  I sat down and thought… He’s right, why am I so quick to fly off the handle now?   I love my family, yet lately I’ve been so impatient with them.  Is it stress?

Am I a bi-polar mom?  One moment I am screaming at them to wake up and hurry up and the next moment I am kissing them and hugging them before sending them off to school.

It’s like I have developed multiple personalities.  One is the strict over bearing, over protective, scolding, screaming mom.  And the other is the hugging, tickling, kissing, lets-got-to-the beach-at-the-spur-of-the-moment mom.  I am the thrifty, budgeting mom yet also the “I want only the best for you” mom.  On one hand I am the stylishly dressed up mom, on some days I am the pajama wearing frazzled mom.  Some days I am so happy with my kids and my husband and think that I have the perfect life, yet there are days that I just want to drop it all off and take a trip to somewhere sunny, where gorgeous guys serve me drinks with umbrellas on it, there’s room service and butlers to cater to my every whim.

I’ve talked to other moms, and they too have noticed that they are more impatient and quick to anger now than when they were single or just newly married.  But with more kids, more financial obligations and yes, more stress, maybe a lot of us moms are becoming ogre moms.

I was raised by a tiger mom.  I didn’t have it easy, I had a looong list of rules to follow.  Discipline is the most important thing, no excuses.  It was tough love.  Now, with my own kids, I try to be as lenient as possible.   But I AM part tiger mom.  I want them to be disciplined and responsible.  I want them to be ready for the real world, yet I want them to enjoy their childhood too.  Let’s face it, motherhood, has opened a wide range of thoughts and emotions in us.  We love our children dearly and we protect them fiercely.  But we also want them to learn how to stand on their own two feet.  We want to discipline them, yet we want to enjoy them.  We want to spend all our waking hours with them, yet we also have to go out and work.  Motherhood is full of contradictions… So what are we to do?

I’ve realized that in spite of all these, once in awhile I should just stop and smell the roses.  So what if the room is messy once in awhile, so what if the toilet seat is up, so what if they forgot to put the toothpaste cap back on…I have to let go of somethings to save my sanity.  So what if I’m too tired to cook, let’s just have pizza night.   Well, these are all easier said than done.  But I will try… I will try my best.

As for my family, they should also realize that we, the “supermoms” are after all also human.  And although we love them so much, we also get tired and stressed, we shout and we rant sometimes… We also need a break.

Museum dates with my kids

Have you ever noticed that kids now are turning into mall rats?  Well, nothing wrong with family bonding in malls.  I myself, love walking around the mall, discovering new products, dining in the restos and catching a movie during weekends.  But I wouldn’t want to limit our family bonding to just going to the malls, especially now that summer is here.  There’s always the beach or some nearby resorts.  I also want family bonding to not just be fun but also educational for the kids.   Museums are a nice start, they are fun and educational…  and my 2 older kids love our museum dates.

An update on Chef’s Galley

We went back to Chef’s Galley last week.  This is already becoming one of our fave neighborhood restos.

As I’ve mentioned in my past blog.  They serve the best Lamb Stew and Gambas this side of town.

Last Friday, I was finally able to try the other items in the menu.

Greek Lamb Burger

I loved this and surprisingly, the taste of the lamb was not too strong.  It’s a different take on a burger and I’ve tried almost all of them.  It was a huge patty served on wheat buns (which I like) and it was served withTatziki (which is a yogurt & cucumber dip).  It’s perfect with red wine or beer.

American Burger

My hubby had this, but I wasn’t able to get a bite since he was really famished.  It was huge too!  I guess he liked it too, coz he finished the entire thing.

Shrimp GambasOf course, we had to have a side order of our favorite gambas.  Served with a thick slice of wheat bread to mop up all that yummy goodness.

For dessert we shared this.  Needless to say we were soooo full…. Burp!

After polishing off all our orders, we just sat there and sipped our wines and Chef Rainbow started chatting with us.  We really enjoyed our conversation and ended up having drinks with chef Rainbow and her friend, Chef Adrian of Yong Jin (will do a piece on this newly opened resto soon, promise) that we ended up going home much later that we planned.

A taste of Taiwan

Last night we had dinner at Feng Wei Wee along Wilson st.

Hot & Sour Soup (130 pesos good for 2-3 pax)

This was really good, with just the right amount of sourness.:)  I can finish a whole bowl by myself.

Fried Ang Sho Pork (Php180)

I didn’t get to taste this, since my daughter didn’t want to eat anything else besides it.  So we just let her have the whole order.

Taiwan Loba Rice (Php70)

My husband had this instead of plain rice.   He said  it was just so-so.

Taiwan Kiampong (Php70)

I didn’t really enjoy this.  I’ve had better Kiampong before.

Steamed Kuchay Dumplings

This was good.  But don’t forget to ask for their dumpling sauce and best eaten while hot.  Hubby liked it.

Sizzling Oyster Tausi

This was our favorite.  Big serving and really good.  A different way to eat oysters…YUMMY!

It’s a simple restaurant but has an extensive menu.  I was also surprised to see a lot of diners.  Service was good and the food was served fast.

Who doesn’t like freebies?  I know I do, so I’d like to share them with you, my beloved readers.  From time to time, I will post a page of links for Local and International Freebies.  Believe me, I have receieved CD’s, books, magazines, rosary, sample scents, sample make-up, cocktail stirrers, sample tea and coffee, even a bag!
